Indian-style Vegetables

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1/2 head cauliflower, chopped into florets
  • 1/2 pint cherry tomatoes
  • 1/2 large red onion, chopped
  • 1 garlic clove, minced
  • 2 large carrots, peeled and cut into coins
  • 1 teaspoon olive oil
  • 1 tablespoon garam masala
  • 1/2 cup plain fat-free yogurt
  • 1 jalapeno pepper, chopped

Recipe

  • 1 steam the cauliflower until fork-tender.
  • 2 meanwhile, warm the olive oil and fry the onion, garlic, and carrots until soft.
  • 3 add the tomatoes and cook until soft.
  • 4 add cauliflower and combine.
  • 5 add masala, yogurt, and pepper. stir.
