Gingered Carrot And Quinoa Salad

Ingredients

  • Servings: 4
  • 2 cups cooked quinoa
  • 2 cups coarsely shredded carrots
  • 1 cup thinly sliced green onion
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon minced jalapeno pepper
  • 3 tablespoons unseasoned rice vinegar
  • 1 1/2 tablespoons vegetable oil
  • 2 teaspoons honey
  • sea salt and black pepper
  • 2 tablespoons toasted sesame seeds

Recipe

  • 1 in a large bowl combine quinoa, carrots and green onions.
  • 2 in a small bowl, whisk together ginger, pepper, vinegar, oil and honey. add to quinoa mixture and toss to coat.
  • 3 season to taste with salt and pepper. cover and refrigerate for at least 30 minutes. serve topped with sesame seeds.
