Edamame And Corn Salsa

Ingredients

  • Servings: 6
  • 1 1/2 cups edamame, shelled
  • 1 cup corn
  • 3 roma tomatoes, diced
  • 1/4 cup cilantro, chopped
  • 1 garlic clove, crushed
  • 1/2 medium red onion, diced
  • 1 jalapeno chile, seeded and diced
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons lime juice
  • salt and pepper

Recipe

  • 1 combine all ingredients in a bowl.
  • 2 refrigerate for at least two hours.
  • 3 serve with pita chips or tortilla chips.
