Chicken Fajita Pizza

Total Time: 33 mins Preparation Time: 15 mins Cook Time: 18 mins

Ingredients

  • Servings: 8
  • 2 teaspoons cooking oil
  • 4 boneless skinless chicken breasts, cut into strips
  • 1 small red bell pepper, cut into bite size pieces
  • 1 small yellow bell pepper, cut into bite size pieces
  • 1 small red onion, cut into bite size pieces
  • 1 (10 ounce) can refried beans
  • 10 ounces roll refrigerated pizza dough
  • 1 -1 1/2 cup picante sauce (i use hot but you can use whichever you like best)
  • 1 cup four-cheese mexican blend cheese
  • sliced jalapeno (as many as you like)

Recipe

  • 1 1. preheat oven to 400 degrees.
  • 2 2. in a large nonstick skillet heat oil over medium-high heat; cook chicken until no longer pink. remove from skillet. add pepper and onion to skillet; cook about 5 minutes or until tender. remove from skillet; set aside.
  • 3 3. unroll the pizza dough onto a baking stone or a baking pan; pinch edges of dough with fingers to form a crust for the pizza.
  • 4 4. spread a thin layer of beans over the dough and add the picante sauce. top with chicken and vegies; spinkle with cheese, and add jalapenos. bake for 13 to 18 minutes or until crust is brown and cheese is melted.
