Ingredients

- 2 ounces olive oil
- 1 1/4 cups diced onions
- 3 tablespoons chopped garlic
- 1/4 jalapeno pepper (with seeds)
- 1 1/2 tablespoons chili powder
- 1 1/2 tablespoons cumin
- 1 1/2 tablespoons tomato paste
- 3 tablespoons whole grain mustard
- 6 tablespoons garlic paste
- 1 1/4 tablespoons pureed chipotle chiles
- 1 1/4 cups heavy cream
- 3/4 cup chicken stock
- salt and pepper
- 1/2 cup grated parmesan cheese
- 1 ounce vegetable oil
- 1 teaspoon chopped garlic
- 3 ounces shrimp
- 5 pieces andouille sausages
- 3 ounces roasted red and yellow peppers
- 8 ounces cooked pasta, linguini
- 1/4 ounce fresh basil
- 1 ounce diced tomato
- freshly shredded parmesan cheese
Recipe
- 1 sauce:.
- 2 heat oil in a sauce pan.
- 3 add onion, garlic and jalapeno and saute over medium heat until lightly brown.
- 4 add the chili powder. cumin and tomato paste cook over low heat for 5 minutes.
- 5 add mustard, garlic puree, chipotle puree, cream and stock and simmer for 20 minutes.
- 6 add parmesan cheese and thoroughly incorporate into the sauce.
- 7 season with salt and pepper to taste.
- 8 strain sauce through a strainer and store in container until use later.
- 9 pasta:.
- 10 pasta should be cooked and drained.
- 11 heat oil in a skillet and add the garlic, shrimp and sausage.
- 12 saute for 2 minutes on high heat.
- 13 add cream sauce and peppers, simmer on medium heat for 4 minutes reducing the sauce by half.
- 14 add pasta and basil and toss all ingredients thoroughly.
- 15 place finished pasta in a bowl and garnish with tomatoes and freshly shredded parmesan cheese.
