Cactus Mexican Style

Total Time: 1 hr 15 mins Preparation Time: 45 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb cactus pieces
  • 1 small tomato
  • 1/4 small onion
  • 1 jalapeno pepper
  • 1/4 bunch cilantro
  • 1/4 cup shredded monterey jack cheese
  • 1 teaspoon salt (optional)
  • 4 tablespoons corn oil

Recipe

  • 1 steam the cactus until softened.
  • 2 drain the cactus.
  • 3 fry all the ingredients except for the monterrey cheese.
  • 4 combine fried ingredients with the cactus and allow to simmer for 15 minutes.
  • 5 top with cheese before serving.
