Fresh Corn Salad With Honey Lime Vinaigrette

Ingredients
- Servings: 4
- 1/4 cup fresh lime juice 
- 1 tablespoon honey 
- 1 jalapeno pepper, seeded and minced 
- 1 -3 tablespoon fresh cilantro, minced 
- 1/4 teaspoon salt 
- 6 ears corn, cooked 
- 1 1/2 cups baby spinach 
- 1 large tomato, seeded and chopped 
- 3/4 cup cucumber, seeded and chopped 
Recipe
- 1 whisk together lime juice and honey. 
- 2 add jalapeno, cilantro, and salt and set aside. 
- 3 cut corn off cobs leaving some pieces large. 
- 4 add to dressing. 
- 5 add spinach, tomato and cucumber and mix well.
