Hoisin - Jalapeno Sauce

Ingredients
- 3 jalapenos, seeded and finely chopped 
- 1 1/2 cups sugar 
- 1 quart hoisin sauce 
- 2 cups water 
- 2 small limes, juice of 
- 2 tablespoons garlic, minced 
Recipe
- 1 in a food processor, puree the jalapenos with the sugar. 
- 2 add the hoisin sauce, water, and lime juice. 
- 3 add the minced garlic. 
- 4 puree until fully incorporated. 
- 5 pour into a 2 quart container. 
- 6 allow the sauce to sit for 1 hour to allow the sugar to dissolve, stirring occasionally. 
- 7 if using for wings, place frissee or other lettuce/garnish on a plate. 
- 8 arrange the cooked wings on top of the lettuce. 
- 9 drizzle the sauce over the wings and lettuce. 
- 10 garnish with parsley and chopped peanuts. 
- 11 for salmon or other meats, drizzle sauce and bake/broil as usual for meat chosen. 
- 12 when cooked, baste or drizzle again with small amount of sauce, leaving a small amount for dipping.
