Garden Gazpacho Salad

Ingredients

  • Servings: 4
  • 1 medium tomato, seeded and chopped
  • 1/2 medium cucumber, chopped (seeded if you like)
  • 1/2 medium green bell pepper, chopped
  • 1 stalk celery, minced
  • 1/4 cup bermuda onion, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 jalapeno pepper, minced (optional)
  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • salt and pepper

Recipe

  • 1 combine all vegetables.
  • 2 whisk together dressing ingredients and pour on vegetables.
  • 3 toss to coat thoroughly, and chill at least an hour (more if you have time) for flavors to blend.
