Cola Glazed Lamb Tenderloin

Ingredients

  • Servings: 4
  • 2 lbs lamb tenderloin
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon parsley
  • 1 teaspoon sage
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups brown sugar
  • 1 cup cola (such as pepsi)
  • 1/4 cup lime juice
  • 2 jalapenos, sliced

Recipe

  • 1 preheat oven to 350°f.
  • 2 in a small bowl, combine olive oil, garlic, parsley, sage, salt and pepper.
  • 3 place lamb tenderloin in a roasting pan. rub garlic herb marinade into meat.
  • 4 cover with lid and put tenderloin into oven.
  • 5 in a small saucepan, combine brown sugar, cola, lime juice and jalapeños.
  • 6 bring to a boil over medium high heat, whisking frequently.
  • 7 turn heat to low and simmer, whisking frequently until sauce is reduced by half. strain to remove jalapeños.
  • 8 remove lamb from oven and pour the glaze over top of the tenderloin.
  • 9 return to oven and continue to baste lamb every 15 minutes until internal temperature reaches 170°f.
