Gahboo's Jalapeno Salsa

Total Time: 1 hr 15 mins Preparation Time: 45 mins Cook Time: 30 mins

Ingredients

  • 60 jalapenos
  • 1 onion, large, chopped
  • 5 garlic cloves, chopped
  • 2 1/2 teaspoons salt
  • 2 1/2 tablespoons oil
  • 2 tablespoons vinegar
  • sour cream (optional)

Recipe

  • 1 halve and seed the peppers.
  • 2 chop the onion.
  • 3 mince the garlic.
  • 4 simmer all vegetables until tender with enough water to steam, but not enough to cover. it is easy to get this too soupy.
  • 5 remove from heat when tender, add salt, vinegar, and oil.
  • 6 puree in food processor.
  • 7 blend in sour cream if you want to tame the heat. if made with hot jalapenos, this can be pretty aggressive. adding a bit of vinegar also tames the heat. can keep but does not can well.
