Curried Coconut Colcannon #sp5

Ingredients

- 6 slices bacon
- 2 cups finely cut organic lacinitos kale
- 3/4 cup coconut milk
- 2 teaspoons thai curry paste
- 1 lb simply potatoes jalapeno & cream cheese mashed potatoes
Recipe
- 1 in a heavy nonstick frying pan heat bacon until browned. remove with slotted spoon and crumble, set aside. in drippings, add kale and cook until wilted.
- 2 open a can of coconut milk without shaking and scoop off the top, most creamiest part until you have 3/4 cup. add coconut to the pan with curry paste.
- 3 add potatoes and cook, covered, until softened. stir in crumbled bacon and adjust seasoning to taste.
- 4 • adjust thai curried paste to your liking, some brands are spicier/ saltier than others. adjust for salt.
