Curried Coconut Colcannon #sp5

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 6 slices bacon
  • 2 cups finely cut organic lacinitos kale
  • 3/4 cup coconut milk
  • 2 teaspoons thai curry paste
  • 1 lb simply potatoes jalapeno & cream cheese mashed potatoes

Recipe

  • 1 in a heavy nonstick frying pan heat bacon until browned. remove with slotted spoon and crumble, set aside. in drippings, add kale and cook until wilted.
  • 2 open a can of coconut milk without shaking and scoop off the top, most creamiest part until you have 3/4 cup. add coconut to the pan with curry paste.
  • 3 add potatoes and cook, covered, until softened. stir in crumbled bacon and adjust seasoning to taste.
  • 4 • adjust thai curried paste to your liking, some brands are spicier/ saltier than others. adjust for salt.
