Crispy Fried Tacos

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (8 ounce) can tomato sauce
  • 1 (4 ounce) can sliced jalapeno peppers
  • 1 small onion, quartered
  • 1 teaspoon garlic salt
  • 1 lb ground beef
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 12 (6 inch) corn tortillas
  • 1 cup shredded cheddar cheese
  • 4 cups shredded lettuce

Recipe

  • 1 in a blender or food processor, combine the salsa ingredients.
  • 2 cover and pulse until salsa reaches desired consistency.
  • 3 transfer to a bowl.
  • 4 cover and refrigerate.
  • 5 in a skillet, cook beef over medoum heat until no longer pink.
  • 6 drain.
  • 7 sprinkle with salt.
  • 8 in another skillet, heat oil.
  • 9 fry tortillas just until softened.
  • 10 drain on paper towels.
  • 11 fill tortillas with beef.
  • 12 sprinkle with cheese.
  • 13 fold in half.
  • 14 in an ungreased skillet, fry tortillas on both sides until crisp.
  • 15 serve with lettuce and salsa.
