Brazilian Pepper-scented Rice

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 1 tablespoon vegetable oil (olive oil)
  • 1 small onion, finely diced
  • 1 garlic clove, minced
  • 1 cup long-grain rice
  • 1 habanero pepper (or 2 jalapeno peppers)
  • 2 -2 1/4 cups hot water
  • 1/2 teaspoon salt

Recipe

  • 1 pour the oil into a large saucepan and heat for a few seconds.
  • 2 add the onion, garlic, and rice.
  • 3 fry gently, stirring for about 4 minutes.
  • 4 add the chili pepper, hot water, and salt. stir well and bring to a boil.
  • 5 simmer for 15 to 20 minutes, until the rice is soft and the water has been absorbed.
  • 6 remove the chili pepper and serve.
