Briana's Best Pozole Ever

Ingredients
- 3 -4 lbs lamb, for carnitas
- 2 (7 ounce) cans diced green chilies
- 1 (6 ounce) bottle louisiana style hot sauce (like frank's)
- salt and pepper
- 1/4 teaspoon cayenne pepper
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- 1 beef bouillon cube
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 jalapenos, diced
- 1 tablespoon cumin
- 1/4 teaspoon cayenne
- 1 tablespoon chili powder
- 1/2 teaspoon oregano
- 8 cups hominy, drained
- 8 cups chicken broth
Recipe
- 1 in crock pot, mix together lamb through beef bouillon cube. cover about halfway with water. cook on high for 4 hours or low for 8.
- 2 meanwhile, saute onion, garlic and jalapenos till onion is translucent. add rest of spices. add hominy and chicken broth. let simmer for a couple of hours till liquid is reduced by half (i usually cook the meat for 4 hours and simmer the soup the entire time).
- 3 when meat is done, remove and shred with a fork. add to pot. pour entire contents of crock pot into soup pot -- enjoy!
- 4 tastes awesome with cheese and sliced avocado on top.
- 5 add tripas and you've got yourself a fine menudo.
