Briana's Best Pozole Ever

Total Time: 4 hrs 15 mins Preparation Time: 15 mins Cook Time: 4 hrs

Ingredients

  • 3 -4 lbs lamb, for carnitas
  • 2 (7 ounce) cans diced green chilies
  • 1 (6 ounce) bottle louisiana style hot sauce (like frank's)
  • salt and pepper
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 beef bouillon cube
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 jalapenos, diced
  • 1 tablespoon cumin
  • 1/4 teaspoon cayenne
  • 1 tablespoon chili powder
  • 1/2 teaspoon oregano
  • 8 cups hominy, drained
  • 8 cups chicken broth

Recipe

  • 1 in crock pot, mix together lamb through beef bouillon cube. cover about halfway with water. cook on high for 4 hours or low for 8.
  • 2 meanwhile, saute onion, garlic and jalapenos till onion is translucent. add rest of spices. add hominy and chicken broth. let simmer for a couple of hours till liquid is reduced by half (i usually cook the meat for 4 hours and simmer the soup the entire time).
  • 3 when meat is done, remove and shred with a fork. add to pot. pour entire contents of crock pot into soup pot -- enjoy!
  • 4 tastes awesome with cheese and sliced avocado on top.
  • 5 add tripas and you've got yourself a fine menudo.
