Guy Fieri's Italian Stuffed Jalapenos

Ingredients

- 15 jalapenos (preferably red, cut in half, seeded and deveined)
- 1 tablespoon canola oil
- 2 lbs mild italian sausage, casings removed
- 1/4 cup red onion, minced
- 1/4 cup red bell pepper, minced
- 3 tablespoons garlic, minced
- 2 cups mascarpone or 2 cups cream cheese
- 1/4 cup parmesan cheese (grated plus more for garnish)
- salt
- pepper
- 1/2 cup mozzarella cheese, shredded
Recipe
- 1 preheat oven to 350 and set a rack in middle of oven.
- 2 place jalapenos on a sheet tray and roast for 10 minutes.
- 3 remove from the oven and let cool.
- 4 turn broiler on medium.
- 5 heat oil in a medium saute pan.
- 6 add the sausage and cook for 5 to 7 minutes.
- 7 add the onions, peppers, and garlic.
- 8 cook to soften for about 5 minutes.
- 9 remove and place in a large bowl.
- 10 cool to room temperature, then add mascarpone or cream cheese, and parmesan.
- 11 mix ingredients thoroughly and season with salt and pepper.
- 12 place approximately 1 tablespoon of mixture into each jalapeno half.
- 13 top with 1/2 teaspoon of mozzarella cheese.
- 14 place the sheet tray of stuffed peppers in oven and broil until mozzarella cheese melts.
