Guy Fieri's Italian Stuffed Jalapenos

Total Time: 40 mins Preparation Time: 25 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 15 jalapenos (preferably red, cut in half, seeded and deveined)
  • 1 tablespoon canola oil
  • 2 lbs mild italian sausage, casings removed
  • 1/4 cup red onion, minced
  • 1/4 cup red bell pepper, minced
  • 3 tablespoons garlic, minced
  • 2 cups mascarpone or 2 cups cream cheese
  • 1/4 cup parmesan cheese (grated plus more for garnish)
  • salt
  • pepper
  • 1/2 cup mozzarella cheese, shredded

Recipe

  • 1 preheat oven to 350 and set a rack in middle of oven.
  • 2 place jalapenos on a sheet tray and roast for 10 minutes.
  • 3 remove from the oven and let cool.
  • 4 turn broiler on medium.
  • 5 heat oil in a medium saute pan.
  • 6 add the sausage and cook for 5 to 7 minutes.
  • 7 add the onions, peppers, and garlic.
  • 8 cook to soften for about 5 minutes.
  • 9 remove and place in a large bowl.
  • 10 cool to room temperature, then add mascarpone or cream cheese, and parmesan.
  • 11 mix ingredients thoroughly and season with salt and pepper.
  • 12 place approximately 1 tablespoon of mixture into each jalapeno half.
  • 13 top with 1/2 teaspoon of mozzarella cheese.
  • 14 place the sheet tray of stuffed peppers in oven and broil until mozzarella cheese melts.
