Laura's Southwest Tater Tot Hotdish

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 16 ounces of seasoned tater tots
  • 16 ounces ground turkey
  • 1 (10 3/4 ounce) can cream of chicken soup
  • 1 (10 ounce) can green enchilada sauce (med hot)
  • 1 (15 ounce) can black beans with jalapenos and lime juice
  • 1 1/4 ounces fajita seasoning mix
  • 1 cup shredded cheddar cheese

Recipe

  • 1 line a 8 x 8 pan with frozen tater tots and let them thaw completely for several hours.
  • 2 cook the ground turkey in a separate pan and drain off fat.
  • 3 add soup and fajita seasoning to the cooked turkey. mix well & set aside.
  • 4 pour the green enchilada sauce over the thawed tots.
  • 5 pour black beans on top (as well as liquid in the can) and spread evenly.
  • 6 add half of the shredded cheese on top of beans.
  • 7 add turkey mixture. top with the remaining cheese.
  • 8 cover with tinfoil and bake in preheated oven of 350 degrees for 1 hour.
  • 9 note: if you like a little crunch in your hotdish i break up some tortilla chips and mix in the finished product.
