Gahboo's Jalapeno Salsa

Ingredients
- 60 jalapenos
- 1 onion, large, chopped
- 5 garlic cloves, chopped
- 2 1/2 teaspoons salt
- 2 1/2 tablespoons oil
- 2 tablespoons vinegar
- sour cream (optional)
Recipe
- 1 halve and seed the peppers.
- 2 chop the onion.
- 3 mince the garlic.
- 4 simmer all vegetables until tender with enough water to steam, but not enough to cover. it is easy to get this too soupy.
- 5 remove from heat when tender, add salt, vinegar, and oil.
- 6 puree in food processor.
- 7 blend in sour cream if you want to tame the heat. if made with hot jalapenos, this can be pretty aggressive. adding a bit of vinegar also tames the heat. can keep but does not can well.
