Chicken And Black Bean Garnachas

Ingredients

  • Servings: 4
  • 1 (16 ounce) can black beans or 1 (16 ounce) can pinto beans, drained and rinsed
  • 1 (14 1/2 ounce) can diced tomatoes with onion and garlic, drained
  • 1 (10 ounce) can premium chicken, drained
  • 2 garlic cloves, minced
  • 1 fresh jalapeno peppers or 2 teaspoons canned jalapeno peppers, minced
  • 1/2 teaspoon ground cumin
  • salt and pepper, to taste
  • 6 (6 inch) flour tortillas
  • 1/2-3/4 cup shredded sharp cheddar cheese (optional)
  • 1 ripe avocado, peeled, sliced, for garnish (optional)
  • sliced jalapeno o pepper, for garnish (optional)

Recipe

  • 1 combine beans, tomatoes, chicken, garlic, jalapeños and cumin in large bowl. season to taste with salt and pepper.
  • 2 to heat tortillas, arrange them in single layers on grill over medium coals. spread chicken mixture over each tortilla. (optional: top with cheese. heat for about 3 minutes, until cheese melts.) remove from grill.
  • 3 top serve, top with sliced avocado and jalapeño, if desired.
