Black Bean And Corn Salsa (low Fat)

Ingredients

  • Servings: 8
  • 1 small red bell pepper, seeded and finely chopped
  • 1 small red onion, finely chopped (or about 1/3 cup)
  • 1/3 cup cucumber (seeded and finely chopped)
  • 1 plum tomato, diced
  • 1 small celery rib, finely chopped
  • 1/2 small jalapeno pepper, seeded and finely chopped (can use less)
  • 1 tablespoon chopped fresh basil
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 2 teaspoons fresh minced garlic
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1 cup frozen corn (cooked and cooled or use canned corn niblits, drained)
  • salt and black pepper

Recipe

  • 1 in a large glass bowl combine all ingredients; toss well and season with salt and black pepper to taste.
  • 2 cover and chill for at least 4 hours or more before serving.
  • 3 delicious!
