Garden Gazpacho Salad

Ingredients
- Servings: 4
 
- 1 medium tomato, seeded and chopped 
 
- 1/2 medium cucumber, chopped (seeded if you like) 
 
- 1/2 medium green bell pepper, chopped 
 
- 1 stalk celery, minced 
 
- 1/4 cup bermuda onion, minced 
 
- 2 tablespoons fresh parsley, chopped 
 
- 1 jalapeno pepper, minced (optional) 
 
- 3 tablespoons red wine vinegar 
 
- 2 tablespoons lemon juice 
 
- 1 tablespoon olive oil 
 
- 1 teaspoon dijon mustard 
 
- 1/2 teaspoon oregano 
 
- 1/2 teaspoon garlic powder 
 
-  salt and pepper 
 
Recipe
- 1 combine all vegetables. 
 
- 2 whisk together dressing ingredients and pour on vegetables.
