Cilantro Rice

Ingredients

  • Servings: 4
  • 2/3 cup fresh cilantro, loosely packed
  • 1/3 cup chopped onion
  • 1/4 cup chopped scallion
  • 1 jalapeno (or to taste)
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil
  • 2 -3 cups cooked rice

Recipe

  • 1 mix all above ingredients except rice in food processor or blender.
  • 2 combine with cooked warm rice.
  • 3 and kosher salt to taste.
