Chicken With Apricot And Chili Glaze

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breasts
  • 1/2 cup apricot jam
  • 1/4 cup red currant jelly
  • 1 tablespoon lime juice
  • 2 teaspoons jalapeno peppers, minced
  • 1/4 teaspoon salt

Recipe

  • 1 combine the glaze ingredients in a small saucepan.
  • 2 bring to a boil, then simmer for about 5 minutes, until thickened.
  • 3 set aside.
  • 4 brush a cold grill with oil and then preheat the barbecue to medium-high.
  • 5 squeeze any remaining lime juice over the chicken breasts and season with salt and pepper.
  • 6 grill for 6 to 7 minutes per side or until the juices run clear when pierced with a fork.
  • 7 place on a serving platter and spoon the glaze over each breast.
