Flat Rice (poha) Veggie Pilaf

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 12
  • 4 cups poha, thick
  • 1/2 cup cashew pieces
  • 1/2 cup bell pepper, any colors
  • 1 cup cilantro, chopped
  • 2 tablespoons gingerroot, grated
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon hing
  • 2 teaspoons sugar
  • 6 -8 tablespoons oil
  • salt
  • 1 large potato, cubed
  • 1/4 cup raisins (optional)
  • 1/2 cup frozen green pea
  • 4 tablespoons lemon juice
  • 1 tablespoon jalapeno, diced
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seed
  • 1 tablespoon coriander powder
  • 3 curry leaves
  • 1 1/4 cups water

Recipe

  • 1 wash and drain rice.
  • 2 combine rice in bowl with 1/4 c water and soak 15 minutes.
  • 3 heat oil in a wok.
  • 4 add mustard seeds.
  • 5 when they crackle, add cashews, raisins, hing, curry leaves, and all dry spices.
  • 6 stir to combine.
  • 7 add all vegetables, ginger, jalapeno, and cumin seeds.
  • 8 add 1 c water and cover.
  • 9 cook over medium heat until potatoes are done.
  • 10 add flat rice, cilantro, salt, sugar, and lemon juice.
  • 11 stir and serve hot with any green chutney.
