Flat Rice (poha) Veggie Pilaf

Ingredients

- 4 cups poha, thick
- 1/2 cup cashew pieces
- 1/2 cup bell pepper, any colors
- 1 cup cilantro, chopped
- 2 tablespoons gingerroot, grated
- 1/4 teaspoon turmeric
- 1/4 teaspoon hing
- 2 teaspoons sugar
- 6 -8 tablespoons oil
- salt
- 1 large potato, cubed
- 1/4 cup raisins (optional)
- 1/2 cup frozen green pea
- 4 tablespoons lemon juice
- 1 tablespoon jalapeno, diced
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seed
- 1 tablespoon coriander powder
- 3 curry leaves
- 1 1/4 cups water
Recipe
- 1 wash and drain rice.
- 2 combine rice in bowl with 1/4 c water and soak 15 minutes.
- 3 heat oil in a wok.
- 4 add mustard seeds.
- 5 when they crackle, add cashews, raisins, hing, curry leaves, and all dry spices.
- 6 stir to combine.
- 7 add all vegetables, ginger, jalapeno, and cumin seeds.
- 8 add 1 c water and cover.
- 9 cook over medium heat until potatoes are done.
- 10 add flat rice, cilantro, salt, sugar, and lemon juice.
- 11 stir and serve hot with any green chutney.
